Everyone needs a simple tomato sauce recipe in their back pocket. Homemade sauce can take a weeknight pasta from, dare we say, drab to fab? Whether you're making homemade lasagna, baked rigatoni with Italian sausage or simply tossing the noodle shape of your choice: this is the best tomato sauce recipe.
This recipe really is so simple. You can roughly chop the vegetables because they're all going into a blender. Don't worry about peeling the carrots! You have better things to do.
Like anything, using great ingredients can take a recipe to the next level. We like San Marzano canned tomatoes, but feel free to use what you like and what's accessible.
The additions of fresh garlic, shallot, celery and carrot add enough dimension for depth of flavor but don't distract from why we're all here: the tomato.
Don't forget to add enough salt! Sprinkle the vegetables with some while they're cooking, but continue to add and taste as you go. If you feel like it's missing something, it's likely salt.
Finally, cut the acidity with a slab (4 Tablespoons) of butter. It's amazing what adding fat can do to round out the sauce and make it taste more complete. You can substitute your favorite vegan butter if that's your preference.
You can use the sauce right away, keep it in the fridge for the week or freeze it for when you're in a pinch!
